Twisted Bolognese

I've recently discovered I cannot handle red meat :( it was one of the foods I had cut out to heal my gastritis but on reintroduction I have noticed a pattern of pain and bloating after consuming. This really sucked for me as some of my favourite dishes contain red meat, it's the main ingredient in my two favourite meals; Spaghetti bolognese and Lasagne!

So instead on completely missing out I decided to find an alternative to the mince, I had tried turkey mince before but found it quite bland and a bit rubbery, then I came across some pork mince in my local supermarket and decided to give that a try, I switched my usual bolognese recipe up a little and I created what I've called twisted bolognese, and the all the flavours worked really well and it tasted amazing, this is now becoming one of my favourite go to recipes and served up with gluten and dairy free garlic bread added that extra touch to make it that perfect comfort, family dinner!

Here's what you'll need:

  • Garlic infused oil

  • 1 pack pork mince

  • 120g dry free from spaghetti pasta (adjust amount to the number you're feeding)

  • 120ml boiling water

  • 1 tin chopped tomatoes

  • Salt and pepper

  • Paprika

  • Tomato puree

  • Sweet chilli sauce

Method (feeds 2)

  1. Heat a large frying pan or wok and add a little garlic infused oil, allow to heat

  2. Fill and boil the kettle, add 120ml of water from the kettle to a pan (more if you're using more pasta) and bring to the boil

  3. Add the pork mince to the frying pan or wok and cook until the meat is no longer pink and cooked through (about 10 mins)

  4. In the meantime add your spaghetti to your pan of boiling water and simmer for 10

  5. Leaving the spaghetti cooking add a little salt and pepper to both the mince and spaghetti

  6. Drain the fat from the mince and return to heat

  7. Add paprika, chopped tomatoes and about a tbsp of tomato puree and stir together

  8. Add sweet chilli sauce, the amount you add depends on how much of a kick you want! Stir in

  9. Leave to simmer for 10 mins, stirring occasionally

  10. Drain spaghetti

  11. Serve and enjoy!
