Any coeliac or gluten intolerant noodle lovers? I'm going to guess that if you've landed on this page then you are! Since going gluten free I've really really missed those noodles .. you know the ones.. they come in a pack with a little sachet, you pour hot water over them and stick them in the microwave for 5 minutes then you have a lunch that's so easy and so satisfying. So I HAD to make something gluten free that was the same or close enough to those because the cravings were too much. My first attempt was a huge fail but second time round I got it spot on and was "super" happy about that.
So fear no more noodle lovers, here's the perfect recipe to get your instant noodle fix.

Here's what you need:
1 bunch gluten and wheat free king soba noodles
1 1/2 TBS gluten and milk free gravy granules
1 pint boiling water
2 tsp paprika
2 tsp cumin
1 tsp garlic granules
Pinch of salt
2 tsp gluten free soy sauce
Method:
Mix gravy granules and boiling water, transfer to a pan
Add all the spices, garlic and salt and mix together
Add the noodles to the pan, slowly, until they are submerged and heat for 5 mins stirring occasionally
Remove pan from heat and drain the noodles, being careful to make sure you save enough of the sauce/juice/gravy so that the noodles are coated with it
Add the soy sauce and mix with the noodles
Serve and enjoy!
