Beef Hotpot

I decided to try and add a bit of red meat back into my diet again to see if I can tolerate it now.

Turns out I still can't :( however this beef hotpot tasted amazing and was almost worth it! I won't be eating it again any time soon but who am I to keep it from you guys! Here's what you need (serves 2):

  • 1 pack of beef mince

  • Garlic infused oil

  • 2 medium sized potatoes, or 1 large

  • Gluten and milk free beef gravy granules

  • 200g chopped tomatoes

  • Tomato puree

  • Salt and Pepper

  • Paprika

  • Gluten free soy sauce


Method:

  1. Heat a little garlic infused oil in a wok or large pan

  2. Add the mince and cook until browned

  3. In the meantime- Thinly slice potatoes and cook in boiling water for 5 mins

  4. Drain once they start to become slightly soft

  5. Mix 2 tbsp beef gravy granules with half a pint of boiling water

  6. Once mince is browned sprinkle with salt and pepper

  7. Add 2 tsp of paprika to the mince and stir

  8. Now add the gravy, tinned toms, 1 tbsp tomato puree and 2 tbsp soy sauce and stir well

  9. Simmer for 10 mins

  10. Add all the mince mixture to a Pyrex dish and place potatoes on top, start around the edges and work inwards

  11. Place on the middle shelf if the oven and cook at 200 for 40 mins

  12. Now serve alone or with veggies!
