Prawn and Potato curry

Having recently discovered a certain amount of coconut milk is not low fodmap (whaaaaaaat?!) I just had to come up with a new, safe recipe for a curry (because I just love curry!) I had no lowfodmap stock, and I wasn't really sure what I could use instead, so I experimented with dairy free butter, a little rice milk, gluten free flour, water and some spices and wow! It turned out delicious!
This was really enjoyed and i'm really very pleased with how it turned out!

Doesn't it just look sooo good! I've added pictures below of the spices I used and the steps! I would love to hear your feedback if you make this.
Ingredients
Gluten free flour
2 small or 1 large potato
1 pack of prawns
50ml rice milk
2tsp cumin
2tsp - paprika
2-tsp - ginger
1tsp - coriander
1tsp - turmeric
3/4 pint of water
1- tbsp garlic infused oil
Method:
Cut the potato into slim slices and set aside
Belt butter in a large pan, add the flour and mix to form a roux
add the milk and stir together
add water and garlic infused oil
add all the spices to the pan and stir
add prawns and potatoes and let simmer for 10 mins or until the potatoes are soft enough to poke a knife in
Serve over rice
