Paella Paella Paella

I had a craving for Paella the other day, it's been so long since I've had it and so, I decided to make it!

I had a think about the ingredients I could use to make it appropriate for all my dietary needs and I realised there really wasn't an awful lot that needed changing, all I really had to swap out was the stock I would use to a fodmap friendly stock and I was good to go and dished up a lowfodmap, gluten free, dairy free, gastritis friendly meal!

Unfortunately I didn't have any saffron and the supermarket had run out too *eye roll* so I had to make do without, it was still very very tasty but saffron adds so much Paella flavour so I highly recommend using it if you have some.



You can also add chicken and/or chorizo to this recipe depending on your tolerance level, cook the chicken and chorizo in the pan with some oil before adding the rest of the ingredients.

This recipe will serve two.

Ingredients

  • 120g paella rice

  • 1 pint lowfodmap chicken stock (I used two Massel stock cubes)

  • 1 pack seafood selection

  • 2 tsp paprika

  • 1tsp turmeric

  • Pinch of salt

  • Pinch of saffron

  • 1 1/2 tbs garlic infused oil


Method

  1. Mix stock cube with a pint of water

  2. Heat oil in a wok/large frying pan/paella pan

  3. Pour the rice into the oil and allow to fry slightly for about two minutes

  4. pour over the stock and allow to simmer for 10 mins

  5. Add the rest of the ingredients and allow to cook for a further 5 minutes or until the rice has absorbed most of the water

  6. Serve!
