Kebab Style Chicken and Chips

I had recently bought some BeFree pitta breads and was thinking what I could make with them, I decided on a kebab style chicken meal with chips, another fake-away meal which will make you feel like you're eating something naughty but in fact is all lowfodmap, gluten free, dairy free AND gastritis friendly!

You will want to marinade the chicken for at least 2 hours in the fridge.

Serves 2

Ingredients

For the marinade:

  • 2 tbsp gluten free soy sauce

  • 1 1/2 tsp maple syrup

  • 1tsp paprika

  • 1tsp turmeric

  • pinch of salt and pepper


Ingredients

For the meal:

  • 2 chicken breast's

  • 1 large or 2 small potatoes

  • 2 Befree or gluten/dairy free pitta bread


Method:

  1. Mix all marinade in a bowl

  2. Dice chicken into large pieces and coat in the marinade, leave in the fridge for at least 2 hours

  3. Preheat grill and oven to 180

  4. Remove chicken from the fridge

  5. Cut potatoes into chip shapes, these can be as thick or thin as you like

  6. Parboil cut up potatoes for five minutes, until you can poke a knife in but the potatoes are not soft

  7. Sprinkle a baking tray with oil and spread chips evenly on the tray

  8. Add the chips to the oven and chicken under the grill

  9. Cook both for 20 minutes, turning half way through

  10. Toast the pitta bread

  11. Ensure chicken is cooked through and serve all together
