Chinese Fake-away

If there's one thing I love, It's a Chinese takeaway on a Friday night!

It's been a VERY long time since I had one, and as much as I want one, It just Isn't worth the issues and pain that would inevitably follow.

So, I thought, why not try making my own?! A Gluten free, Dairy Free, Low FODMAP Chinese fake away!

So that's what I did.

I was having a good day and feeling quite well so I headed to the shops and picked up a few ingredients I thought I would need/could use and I got to work In the kitchen, I made it all ahead of time and boxed it up for me and my partner to reheat in the evening for dinner, I was happy with how well it reheated too! And he seemed to enjoy it, his plate was empty anyway so all positive signs.

I chose to make Vermicelli rice noodles, peanut sesame chicken and some battered chicken strips this is all Gluten free, dairy free and lowfodmap but if you are sensitive to fried food i'd avoid the chicken strips!

In these recipes I use soy sauce, its important you find a gluten free option that is low in fodmaps, so check the label! This is the one I use:















The recipe's are below, I hope you enjoy it as much as we did!



For the Battered chicken strips:

Ingredients:

  • Chicken cut into strips

  • Plain Gluten free flour - 5 tbs

  • Water

  • Vegetable oil - 1 pint

  • 1 tsp cornflour

Method:

  1. Heat vegetable oil until sizzling

  2. Mix Gluten free flour and cornflour, slowly adding the water until you have a thick smooth consistency.

  3. Coat the chicken strips in the mixture.

  4. Add the coated chicken strips to the hot oil and fry for 5 mins or until the batter is golden and the chicken is cooked.

  5. Remove from oil and place on some kitchen towel until cooled.


For the Sesame chicken:

Ingredients:

  • Diced chicken

  • 2 tbsp peanut butter

  • 2 tbsp Soy sauce

  • Sesame seeds

Method

  1. Heat the diced chicken in a large frying pan or wok until cooked through and slightly browned.

  2. Mix the peanut butter, soy sauce and a handful of sesame seeds in a bowl.

  3. Add to chicken and stir together.

  4. Serve alone or over rice.


For the Vermicelli rice noodles:

Ingredients:

  • Half a pack or rice noodles ( or however much you feel for the amount of people you are feeding!)

  • 1 pack of cooked prawns

  • Cumin - 1tsp

  • Paprika -2tsp

  • Turmeric -1tsp

  • Salt - pinch

  • Soy sauce - 1tbsp

  • Vegetable oil

Method:

  1. Soak the rice noodles in boiled water for 5 mins, until soft.

  2. Heat the oil in a large frying pan or wok.

  3. Add noodles and all ingredients to the wok, stir and heat through

  4. Serve
