Chinese Chicken Chow Mein

I'm extending on my Chinese fake-away which you can find here with this Chicken chow mein recipe! For this recipe you will need gluten free noodles, I had some trouble finding these but found some amazing ones from Asda, they are KingSobaNoodles, you can find these online from amazon if your are having trouble getting hold of them!

I was really impressed with how much this recipe tasted like a proper Chinese chow mein from a take away so I KNOW you are going to love this recipe!
So, here's what you will need: (serves 2)
2 bundles of king soba gluten free rice noodles
2 small chicken breasts
Ground ginger
Paprika
Gluten free soy sauce
Spring onion
1 Vegetable stock cube
Garlic infused oil
Salt
Ground pepper
Method:
Add 1 pint of water to a pan, add the stock cube and bring to the boil
Slowly add in the noodles allowing them to naturally soften into the pan and heat for 3-5 mins until noodles are cooked, drain and run under cold water, set aside.
Finely chop the spring onions (remember to only use the green part if you are following low fodmap)
Fry the chicken in a wok in a splash of garlic infused oil until slightly browned and cooked through, add the spring onion and fry for a further 2 mins
Add the noodles into the pan and stir so all the ingredients are spread evenly
Now you want to add your soy sauce, I recommend 2 tbsp but add more or less according to taste! Add 2 tsp of both paprika and ground ginger along with a pinch of salt and ground pepper
Give it a good stir and continue to heat for a further 3-5 mins
Serve alone or with other recipes from my Chinese fake-away recipe!
