Chicken and Bacon Tagliatelle GF/DF Lowfodmap

My first recipe post is a delicious chicken and bacon tagliatelle. This recipe surprised me as it is packed full of flavour, the pasta seemed to absorb all the flavours and I was pleasantly surprised.

I knew starting a LowFODMAP, gluten free, dairy free and gastritis friendly diet was going to be extremely restricting and flavours would be lacking so I set out to find herbs and spices that would not upset my stomach and are also lowfodmap to try and bring some satisfaction to my meals. My favourite go to spice is paprika, I just love it and it pretty much goes with everthing!


There are many things included in the lowfodmap diet that I still cant have due to the gastritis such as tomatoes and bell peppers. I used to cook most my sauces from scratch and the base was always a tin of chopped tomatoes! If you're following just the lowfodmap diet you could add peppers and tomatoes to this recipe however, gastritis sufferers... avoid those ingredients like the plague!


I tolerate this bacon well, some gastritis sufferers won't so if you don't think you can try a bacon alternative like turkey rashers or a vegetarian options. I used bacon medallions that are unsmoked.

Serves two

Ingredients:


- 1-2 tbs vegetable oil (or garlic infused oil)

- 1 large or 2 small chicken breasts

- 2-3 bacon unsmoked medallions

- 120g dried gluten free tagliatelle

- 2tsp paprika

- 2tsp salt


Method:


1. Heat oil in a large frying pan or a wok

2. Cut chicken and bacon into chunks and add to the pan, heat until chicken and bacon are fully cooked and the chicken is no longer pink in the middle.

In the meantime,

3. Bring a large pan of water to the boil, add the gluten free tagliatelle and cook for 10 minutes

4. Drain pasta and add to the pan with the chicken and bacon, add paprika and salt and stir together.

5. Serve
